Can I add notes to orders, customers, or purchase orders?

Yes. Order, customer, and purchase order detail pages each have a notes card — tap it to edit, up to 500 characters. You can also write one in the form when creating a customer or a purchase order.

Notes don't depend on status: completed orders, voided orders, and returns can all be annotated or edited. An order's amounts and items are fixed at checkout; the note sits alongside the document and never changes its contents.
